Even in winter, when the brewery can be bitterly cold, the dedicated brewers handle the rice with extra care to ensure that these freezing conditions don't affect the sake-making process. In these months, they remain committed to the mission of creating an incomparable sake.

Tasting Notes

When you open Daiginjo 'The' and close your eyes, an aroma reminiscent of fresh muscat will envelop you, enticing you to try it instantly. When you sip this sake, a gentle pineapple-like sweetness is evident. The exquisitely balanced acidity is refreshingly pleasant, while the aftertaste lingers in your mouth with a delicious flavor.

In addition to hand-making this sake, the brewers also complete the final bottling process themselves.<br><br>Indeed, no one else is allowed to do it, as the expert brewers aim to maintain the high standards they set.<br><br>From the brewery to the customer's doorstep, the sake is transported under strict temperature control and protected from the light once bottled.

Brewed with natural fresh water in Japan

This sake is brewed using subsurface water from the Gunma prefecture, known for having some of the softest water in Japan. You will be enchanted by its purity when savoring sake made from this high-quality water!
